Everyone in Thiruvananthapuram has a favourite plate of alfaham, and most of the arguments about it happen over a shared platter. At both our restaurants, Kowdiar and Venpalavattom near Lulu Mall, Al Faham is mildly spiced and cooked over charcoal, so the smoke does the talking. Order a half for one (₹420) or a full bird for the table (₹760).

Our Corporate Chef, Yusaf Ali, has cooked in India and the Middle East, and it shows in the Arabic kitchen. Marinades rest long enough to work into the meat, and charcoal and the clay oven do the finishing. The Al Faham is mildly spiced so the smoke comes through, the Adana is hand-minced, and the Lari Thoom Saffron Kebab carries saffron, cardamom and garlic.
